INGREDIENTS

(for 4 servings)

Hummus

  • 2

    Red Peppers (Roasted)

  • 1

    Red Onion

  • 1 tin

    Chickpeas

  • 2

    Garlic Cloves

  • 50 ml

    Olive Oil

  • Salt and Pepper to taste

Salad

  • 1/2

    Iceberg Lettuce (sliced)

  • 100 gr

    Cherry Tomatoes (quartered)

  • 1/2

    Cucumber (halved and sliced)

  • 1

    Red Onion (diced)

  • 50 gr

    Sweet Corn

  • 25 gr

    Black Olives

  • 2 tbsp

    Red Wine Vinegar

  • 2 tbsp

    Olive Oil

  • 1/2 tsp

    Sugar

Method

  1. Place all hummus ingredients in blender and puree until thick and creamy.

  2. Combine oil, vinegar and sugar. Mix well until fully combined.

  3. Add all salad ingredients in a salad bowl and toss well.

  4. Place salad on plate and add scoops of humus. Serve with pita bread.
